PEACH SAUCE | |
1- 29 oz can sliced peaches 1/4 cup sugar (1/4 cup if peaches are in heavy syrup) 2 tbsp corn starch 1/2 tsp finely grated orange peel 1/3 cup orange juice 1 tbsp butter Drain peaches and save 1 1/4 cup syrup; add water if needed to make 1 1/4 cup. Coarsely chop peaches. In a saucepan, combine sugar and corn syrup. Add reserved syrup. Cook and stir until thick and bubbling, about 4 or 5 minutes. Remove from heat. Stir in orange peel, orange juice, butter and chopped peaches. Store in covered bowl in refrigerator; do not stir until time to serve. Serve over ice cream, pound cake, waffles, crepes, etc. Makes 3 cups. Recipe can be doubled. |
