BEAN AND PISTOU SOUP 
2 c. chicken broth
2 (19 oz.) cans white beans, rinsed & drained
2 tbsp. pesto sauce
2 tbsp. grated Parmesan cheese
Freshly grated black pepper to taste

Put broth and beans in saucepan and bring to boil over moderate heat. Reduce heat to low and stir in remaining ingredients. Simmer about 1 minute. Makes 4 (1 cup) servings. Nutrients: 496 calories, 29.4 grams protein, 11.5 grams fat, 3.9 mg cholesterol, 22.1 grams fat, 483 mg sodium.
