3 BEAN SOUP 
2 tsp. olive oil or vegetable oil
1/4 c. diced onion
1 garlic clove, minced
1 c. thinly sliced zucchini
1 can Italian tomato sauce
1 can kidney beans
1/2 can white beans
1/2 can garbanzo beans
1/2 tsp. basil
1/8 tsp. salt and pepper

In 2 quart saucepan, heat oil and saute onion and garlic - 3 minutes. Add zucchini and cook about 5 minutes (stir constantly). Stir in tomatoes, beans, 1 cup reserved liquid and seasonings. Bring to boil - simmer 10-15 minutes.
