POOR MAN'S LOBSTER 
2 lb. cod or pearch or any inexpensive fish
1 tsp. salt
1 bay leaf
Few slices on onion
1 slice lemon
Melted butter
Chopped parsley

Place fillets in a shallow pan (frying pan works well). Cover with water. Add all ingredients EXCEPT butter and parsley; bring to boil. Immediately turn down heat, simmer, covered for 12 minutes until fish flakes.

CAREFULLY remove fish, drizzle with melted butter and sprinkle with parsley. Serve with additional drawn butter.
