CHEESE PANCAKES 
2 eggs
2 c. buttermilk
1/4 c. oil
1 3/4 c. flour
2 tbsp. sugar
2 tsp. baking powder
1 tsp. baking soda
1/2 tsp. salt
1/2 c. cheese, shredded

Beat eggs; stir in buttermilk and oil. Add flour and remaining ingredients; stir just until large lumps disappear. Heat griddle to medium-high and lightly grease. Pour 1/4 cup batter for each pancake. Serves 16.
