UPSIDE DOWN COBBLER | |
1 stick butter 1 1/4 c. flour 2 c. sugar 3 tsp. baking powder 1 c. milk 4 c. fresh fruit (peaches or berries) 1/4 c. water Preheat oven to 400 degrees and melt the butter in an oblong pan. While the butter melts make batter of the flour, 1 cup of sugar, baking powder and milk. Also mix fruit, 1 cup sugar and water in a saucepan and heat to just below boiling. Gently pour batter into the melted butter. DO NOT STIR. Gently pour the fruit over the batter. DO NOT STIR. Bake for about 30 minutes or until golden brown. You may use canned or frozen fruit but omit the water and sweeten to taste. |
