RUSSIAN MINT PIE 
1 c. butter
2 c. sifted powdered sugar
4 (1 oz.) sqs. bitter chocolate, melted
4 eggs
1 tsp. peppermint flavoring
2 tsp. vanilla
18 vanilla wafers
1 c. whipping cream, whipped

Cream butter and sugar together; blend in melted chocolate. Add eggs and beat well. Blend in flavorings. Place vanilla wafers in foil muffin liners in muffin pan. Fill 3/4 full with chocolate mixture. Place dollop of whipped cream on top and sprinkle with chopped nuts. Freeze in muffin tins to keep shape. Let stand at room temperature at least 15 minutes.
