PUMPKIN SQUARES 
1/2 c. oil
1 1/2 c. honey
2 c. pumpkin
1 egg
2 c. whole-wheat pastry flour
1/2 c. buttermilk or water
1 tsp. baking soda
1/2 tsp. salt
2 tsp. cinnamon
1/2 tsp. nutmeg
3/4 tsp. cloves
1/2 tsp. allspice
2 c. oats (uncooked)
1 c. raisins or chopped dates
1/2 c. nuts

Beat oil, honey, pumpkin and egg. Add flour, salt, baking soda, spices and oats. Mix well until blended. Add raisins or dates and nuts; mix. Grease 13 x 9 inch pan, spread batter evenly. Bake at 350 degrees for 40 minutes or until done.
