PINEAPPLE UPSIDE-DOWN CAKE 
Batter:

1 cup flour
1 cup sugar
1 tsp. baking powder
pinch of salt
3 egg yolks (save egg whites)
5 tbsp. pineapple juice
1 stick (1/4 lb) butter
1 c. brown sugar
1 can sliced pineapple
maraschino cherries

Beat egg yolks; add sugar and pineapple juice.

Sift together flour, baking soda and salt. Add to first mixture. Beat egg whites and fold in.

In a large cast iron skillet, melt butter and add brown sugar. Place pineapple slices in skillet (this will be the top of the cake) and place a cherry in the center of each pineapple slice. Pour batter over pineapple.

Bake in a preheated oven at 350°F for 25 to 30 minutes.
