FUNNEL CAKES 
1 1/4 c. all-purpose flour
3 tbsp. sugar
1 tsp. baking soda
3/4 tsp. baking powder
1/4 tsp. salt
1 egg
3/4 c. milk
Salad oil
Powdered sugar

Combine dry ingredients; add egg and milk, beating until smooth. Heat 1 inch oil to 375 degrees in a deep skillet. Cover bottom opening of a funnel with finger. Pour 1/4 cup batter into funnel. Hold funnel over center of skillet. Remove finger from funnel end to release batter. Move funnel in a circular motion to form a spiral.

Fry 2 minutes, turning once. Drain on paper towels and sprinkle with powdered sugar.
