PINEAPPLE UPSIDE DOWN CAKE 
1 c. brown sugar
1/2 c. butter
1 (15 oz.) can sliced pineapple
Maraschino cherries
3 eggs, separated
1 1/2 c. white sugar
8 tbsp. pineapple juice
1/4 tsp. vanilla
1 1/2 c. flour
1 tsp. baking powder

Melt butter in oven-safe 9" skillet and stir in brown sugar. Arrange halved pineapple slices around exterior of pan and a whole one in the middle. Put 1/2 maraschino cherry in each center hole of pineapple. Beat egg yolks, sugar and pineapple juice until lemon colored; add vanilla. Sift dry ingredients and add to egg yolk mixture. Fold in stiffly beaten egg whites. Pour over pineapple in skillet. Bake at 350 degrees for 50 minutes or until toothpick inserted in middle comes out clean. Cool 2 minutes and invert onto large plate.
