FRESH APPLE CAKE | |
1 1/4 c. Crisco oil 2 c. sugar 3 eggs, well beaten 2 tsp. vanilla 3 c. sifted plain flour 1 1/4 tsp. baking soda 1 tsp. salt 3 c. coarsely chopped apples (tart) 1 c. walnuts or pecans 1 tsp. cinnamon Combine oil, sugar, eggs, vanilla, flour, soda, salt and cinnamon. Mix well; add apples and nuts. Batter will be very stiff. Put into a greased tube pan and bake at 325 degrees for 1 1/2 hours. TOPPING: 1/2 stick butter 3/4 c. brown sugar 1 tsp. vanilla 1/8 c. milk Bring to a boil and put on hot cake. ALTERNATE ICING: Juice from 1 lemon 1 c. confectioners' sugar Blend lemon juice and confectioners' sugar and drizzle on cake. If you want to freeze this cake, don't put the topping on it until you have thawed it and are ready to use it. The topping tends to get a little moist if it has been frozen. |
