GRANDMA'S RICE PUDDING
5 tbsp. "good rice"
Cold water
2 egg yolks
1 qt. milk

Rinse "good rice" with cold water. Add egg yolks, stir to blend. Add milk. Place in heavy pot over low flame and cook slowly until rice is fairly soft and has absorbed the milk. Stir with a fork from bottom of pan to keep rice from sticking. Should take about 1 to 1 1/2 hours.

Add about 3 tablespoons sugar, 1 teaspoon vanilla and a lump of butter the size of a walnut. Shake of nutmeg. Place in serving dishes.
