SOUP AU JARDINERE 
2 c. chicken stock
6 scallions
3 cucumbers, remove skin if waxed
2 cloves garlic
Handful parsley
Few basil or tarragon leaves
Salt and pepper
1/2 lb. spinach or watercress, bunch
1-2 tsp. lemon juice
1 ripe avocado
1 to 1 1/2 c. plain yogurt

Put first 7 ingredients together, bring to a boil reduce heat cover and simmer until vegetables are soft. Add spinach and let it just will adjust seasonings. Put in lemon juice. Put in blender with avocado blend until smooth. Remove and chill; add yogurt to desired consistency when serving.
