EAST INDIA SPINACH SALAD | |
1/4 c. oil 1/2 c. vinegar 2 tbsp. chopped chutney 2 tsp. sugar 1/2 tsp. salt 1 tsp. curry powder 1 tsp. dry mustard Mix together and refrigerate. SALAD: 8 c. finely sliced spinach greens 1 1/2 c. unpared red apples, cut in sm. pieces 1/2 c. white raisins 1/2 c. chopped peanuts 2 tbsp. chopped red onion or spring onions Toss ingredients lightly. Dress with chutney dressing just before serving. Top with a handful of shredded coconut. |
