POTATOES WITH TOMATO (BURGONYA
PARADICSONINIAL)
 
6 boiled potatoes
1/4 c. butter
1/4 c. chopped onion
1 c. tomato sauce (8 oz. can)
1 tbsp. sugar
1/8 tsp. pepper
1 c. sour cream
1/2 c. milk
2 tbsp. parsley

Peel and slice potatoes into 1/4 inch slices. Set aside. Brown onion in butter and tomato sauce, sugar, pepper and bring to a boil. Remove from heat add sour cream which has been mixed with milk stirring vigorously with a fork. Gently mix potatoes in sauce and heat 2-3 minutes. Garnish with parsley.
