RICE PUDDING 
1 c. rice
Pinch of salt
1 egg
1 c. sugar
1 qt. milk
1 tsp. vanilla
Cinnamon

Place rice in top of double boiler. Cover with water about 1/2 inch above rice. Add salt, cover and cook over medium heat. Beat egg in bowl and add milk to thin like an omelet. When rice has absorbed all water, add sugar, egg and mix well. Fill pan to top with milk. Continue cooking covered, stirring occasionally until thick (1 hour). Remove form heat and pour into dish. Stir vanilla in and sprinkle top with cinnamon. Pudding thickens as it cools.
