CREAMY RICE PUDDING 
3 c. milk
1 c. water
1/2 c. rice (preferably Carolina)
3/4 c. sugar
1/8 tsp. salt
2 tsp. vanilla
2 eggs (room temperature)
Cinnamon (optional)

Bring milk, water, rice, sugar and salt to a boil on top of the stove. Cover and simmer until soft, approximately 45 minutes. Beat 2 eggs in a bowl. Add 2 teaspoons vanilla to eggs. Add hot pudding to eggs stirring well. If pudding thickens as it cools, thin out with half and half or milk. Sprinkle cinnamon on top of pudding.
