RICE PUDDING (WITH MERINGUE) 
1/4 c. rice
1 c. water
2 c. milk
2 eggs, separated
3 tbsp. sugar
1/8 tsp. salt
1 tsp. vanilla
4 tbsp. sugar

Put rice and water in top of double boiler for about 1/2 hour until rice swells and is dry. Add milk and keep over the boiling water for another 5 minutes. Meanwhile, beat egg yolks with salt and pepper. Pour some of hot milk over beaten yolks and mix well. Reduce egg and milk mixture to rest of hot milk and cook over direct medium heat until creamy. Add vanilla. Pour into greased baking dish and top with meringue made by beating egg whites with 4 tablespoons sugar until very stiff. Put in 325 degrees oven for 20 minutes to brown meringue. Chill before serving.
