“CINNAMON COFFEE CAKE” IS IN:

CINNAMON COFFEE CAKE 
1 1/2 cups all-purpose flour
2 1/2 tsp. baking powder
1/2 tsp. salt
1/2 cup sugar
1 egg
1/4 cup vegetable oil
3/4 cup milk

Cinnamon Crumb Topping:

1/3 cup all-purpose flour
1/2 cup sugar
1/4 cup (1/2 stick) butter, softened
3/4 teaspoon cinnamon

Coconut Nut Topping:

2/3 cup brown sugar, packed
1 cup flaked coconut
1/3 cup butter, softened
1/4 cup heavy cream
1/2 cup finely chopped nuts (optional)

Preheat oven to 375°F.

Combine dry ingredients for cake. Beat together egg, oil and milk, then add to dry ingredients.

Brush a square or circular pan with butter. Dust the pan with flour and tap out any excess. Fill pan with cake batter and level off top with a spatula. If using the Cinnamon Crumb Topping, spread over top of cake and bake.

If using Coconut Nut Topping, combine ingredients after cake is baked and spread over cake while still warm. Broil on low (just under top burner in oven) until lightly golden. Watch carefully so as not to burn.

Bake at 375°F for 20-25 minutes.

Always a favorite. I add 1 teaspoon of vanilla to the batter and substitute 1/2 cup packed brown sugar for the sugar in the topping.

It was easy to make. I did the cinnamon topping, and found that it took about 30 minutes to bake. I think that I will add vanilla when I make it again.

Love this recipe. I added vanilla and use brown sugar instead of white plus ran out of cinnamon just put 1/2 tsp., but overall it was a success.

Overall great recipe!! I did substitute half the white sugar for brown sugar to add a little more sweetness. I also folded two medium sized apples peeled and chopped into the cake mixture. I also added walnuts to crumb topping. Yes this isn't the exact recipe because I added a few things but it's a good base recipe. When pouring it into an 8x8 square oven safe glass dish I did half the cake mixture then half the crumb topping. Repeat. Yummy!

My husband and I loved this! I swapped out the egg for 4oz unsweetened applesauce, and used unsweetened almond milk to make it a bit healthier (okay, I may have used this as an excuse to make it for breakfast...it's healthy, right...?) and used the cinnamon crumb topping. It took our oven 30 minutes to cook it all the way after pre-heating it completely. We live in lower Alabama, so that may have affected the time.

FAB-U-LOUS!! My first time ever making a homemade coffee cake. I'll never buy one from the store again. I was very surprised how high it rose from that little bit of batter. Even though I ran out of baking powder and used a mixture of cream of tartar and baking soda, the cake almost came to the rim of the 9-inch round cake pan. I also added 1/2 tsp. vanilla and 1/4 cup brown sugar and 1/4 white sugar to the batter. Used all brown sugar and 1 tbsp. for the topping. But my topping baked into the cake, but its still delish. Made an icing with powdered sugar, milk, and vanilla. Will be making this again and again and again. And I want to thank you guys for all the tips. They were right on the money. A special thank you to CM. This cake is the bomb.
