SOUTHERN PUDDING CAKE 
2 cups flour
1 1/2 cups sugar
1 1/4 tsp. baking soda
1 tsp. allspice
2 tsp. baking powder
1 tsp. salt
1 tsp. cinnamon
3/4 tsp. vegetable oil
3 eggs
1 cup buttermilk
1 cup chopped nuts
1 cup cooked, chopped dried plums

Grease and flour a 9x13-inch pan. Preheat oven to 350°F.

Sift or whisk together dry ingredients. In another bowl, beat all remaining ingredients (except nuts). Add dry ingredients to bowl, and stir well for 30 seconds. Add nuts and cooked plums/prunes. Stir well and turn batter into pan.

Bake for 40-45 minutes.

Meanwhile, make glaze. Combine:

1 cup sugar
1/2 cup buttermilk
1 stick butter
1 tsp. vanilla
1 tbsp. corn syrup or honey

Bring to a boil. Pour over pudding cake while still hot.
