QUICHE LORRAINE 
1 (9 inch) pie crust
12 slices bacon, crisply fried and crumbled
1 c. shredded Swiss cheese (4 oz.)
1/3 c. chopped onion
4 eggs
2 c. half and half
3/4 tsp. salt
1/4 tsp. pepper
1/8 tsp. cayenne pepper

Sprinkle bacon, cheese and onion in pie crust. Beat eggs slightly; beat in remaining ingredients. Pour egg mixture into pie crust. Cook uncovered at 425 degrees for 15 minutes. Reduce oven temperature to 300 degrees. Cook uncovered about 30 minutes longer.

Let stand about 10 minutes before cutting.

Makes 6 servings.
