QUICHE LORRAINE 
1 (9") pie crust
1 tbsp. soft butter
12 bacon slices
4 eggs
2 c. whipped cream
3/4 tsp. salt
1/8 tsp. nutmeg
1/4 lb. shredded Swiss cheese (1 c.)

Spread crust with soft butter; beat eggs, cream, salt and nutmeg with wire whisk; stir in cheese and pour egg mixture into crust. Fry bacon until crisp. Drain on paper towels and crumble. Sprinkle in pie crust. Bake 15 minutes at 400 degrees; turn oven to 325 degrees and bake 35 minutes. Let stand 10 minutes before serving.
