MATZO KUGEL 
1 c. minced onions
1 c. diced celery
6 tbsp. chicken fat or vegetable shortening
6 matzos, broken into sm. pieces
1 tsp. salt
1/4 tsp. pepper
2 tsp. paprika
2 eggs, slightly beaten
1 can condensed clear chicken soup
1 1/4 c. hot water

Saute onions and celery until tender and glossy. Add broken matzos. Combine remaining ingredients and add to matzo mixture. Pour into well-greased 1 1/2 quart baking dish. Place in moderate oven (375 degrees) and bake for about 40 minutes. Serves 6 to 8.
