CHOCOLATE ZUCCHINI CAKE 
2 eggs
2 c. sugar
1 c. salad oil
1 tsp. vanilla
3 c. grated zucchini
3 c. flour
1 tsp. salt
1 tsp. baking soda
5 tbsp. cocoa
1 tsp. baking powder
3/4 c. shredded coconut
3/4 c. chopped nuts (optional)

Beat eggs, add sugar, and oil, beating well. Mix in zucchini. Add flour, salt, soda, cocoa and baking powder, beat at least 2 minutes. Stir in vanilla, coconut, and nuts. Pour into 9 x 13-inch pan or Bundt pan or cupcake liners. Bake at 350 degrees for 1 hour or 25 minutes for cupcakes.
