ZUCCHINI CAKE 
3 c. grated zucchini
3 c. flour
1 tsp. salt
3 c. sugar
1 tsp. baking soda
2 tsp. baking powder
1 1/2 c. oil
1 c. chopped pecans
1 tsp. pumpkin pie spice
4 eggs
1 tsp. vanilla

Beat eggs and sugar. Add oil and zucchini. Mix well. Sift together dry ingredients several times. Add to first mixture, a little at a time. Mix well. Add vanilla and nuts last. Bake in 9"x13" pan at 325 degrees for 1 hour or until done.

NOTE: I use a combination of cinnamon, nutmeg, cloves, etc. instead of the pumpkin pie spice.

ICING:

1/2 c. butter
1 lb. box powdered sugar
8 oz. pkg. cream cheese
1 c. chopped pecans

Blend first three ingredients until smooth. Spread on cooled cake. Sprinkle nuts on top.
