ZUCCHINI FRUIT CAKE 
4 eggs
1 c. oil
3/4 tsp. baking powder
1 1/2 tsp. baking soda
2 c.sugar
3 1/2 c. flour
2 c. grated zucchini
1 c. raisins
1 c. nuts
1 c. candied cherries
1 c. candied pineapple
Dates (opt.)
1 tsp. vanilla
1 tsp. cinnamon or other spice

Mix sugar, eggs, oil and vanilla. Alternate zucchini with dry ingredients that have been sifted together. Add fruits and nuts. Bake in loaf pans at 350 degrees for 55 minutes for large and 35 to 40 minutes for small ones. Test with tester, when it comes out dry, they are done.
