FAVORITE POTATO SALAD | |
7 med. potatoes 2 or 3 hard-cooked eggs DRESSING: 1/3 c. sugar 1 tbsp. cornstarch 3/4 tsp. salt 1/4 to 1/2 tsp. celery seed 1/4 tsp. dry mustard 1 egg, slightly beaten 1/2 c. milk 1/4 c. mayonnaise 1/4 c. chopped onion 1/4 c. vinegar 3 tbsp. butter Cook potatoes in jackets, peel and dice to make 6 cups. Cook and peel eggs and dice. May use 1 egg, sliced on top, for decoration. Mix in double boiler sugar, cornstarch, salt, celery seed and dry mustard. Mix together slightly beaten egg, milk, vinegar, and butter. Add to ingredients in double boiler, and cook until thick. Mix mayonnaise and onion. Add to thickened, cooked mixture and cool. Combine cubed potatoes and cubed eggs. Carefully fold in the dressing and chill. Sprinkle with paprika. Makes 6 to 8 servings. |
