CAJUN VEGETABLE SAUTE 
2 tsp. olive oil
1 lg. zucchini, sliced
1 lg. yellow squash, sliced
1 med. onion, chopped
1 clove garlic, crushed
1/4 c. fresh chives, chopped
1 tsp. Creole seasoning
1/2 tsp. pepper
1/2 tsp. hot sauce

Heat olive oil in a large skillet until hot. Add remaining ingredients and toss gently. Cover and reduce heat. Cook 10 minutes or until crisp and tender.
