SWEET POTATO NUT BREAD 
1/2 cup soft butter
2 2/3 cup sugar
4 eggs
2 cups cold mashed sweet potatoes
3 1/2 cup sifted all purpose flour
1 tsp. salt
1 tsp. cinnamon
1 1/2 tsp. nutmeg
2 tsp. baking soda
1 cup nuts, chopped
2/3 cup cold strong coffee

Cream butter and sugar. Add eggs and sweet potatoes. Sift together dry ingredients; add nuts and stir into creamed mixture with coffee. Pour into 2 greased 9 x 5 x 5 inch loaf pans.

Bake at 375°F for 1 hour. Cool 10 minutes.
