1 pkg. instant pistachio pudding (dry)
1 1/3 c. sm. curd cottage cheese
2 c. crushed pineapple, undrained
2 c. Cool Whip
Chopped pecans, optional

Combine cottage cheese and pineapple well. Add dry pudding to cottage cheese and pineapple. Mix well. Fold in Cool Whip. Add nuts if desired. Makes 4 servings.

Variation: Substitute 1 package vanilla pudding and 1 package strawberry jello for the pistachio pudding. Make as above.
