TOMATO RICE 
4 c. water
2 c. washed rice
1 lb. chopped tomatoes
3 med. size finely chopped onions
1 tbsp. grated ginger
1 tbsp. grated garlic
1 tsp. chopped green chilies
1 inch stick cinnamon
1 stick unsalted butter
2 whole cloves
1/2 c. chopped cilantro
Approximately 1/2 tsp. salt or to taste

Grind ginger, garlic, chilies, cloves and cinnamon and set this paste aside.

In skillet, saute onions in butter until browned. Set half of it aside. Now add the ground paste to skillet. Add water and salt to skillet. When the water boils, add the rice. Reduce heat and cover skillet, cooking until rice is done.

Transfer cooked rice to baking dish and brown for 5 minutes at 350 degrees. Garnish with fried onions and serve.
