RICE WITH CHEESE AND TOMATOES 
1 c. rice or 3 c. cooked rice
3 tbsp. oil
1 med. onion, chopped
3 stalks celery, chopped
1 green pepper, chopped
2 c. cooked tomatoes
2 c. shredded cheese
1 tsp. salt
1/8 tsp. pepper

Cook rice according to package directions. Saute onion, celery, and pepper in oil. Add tomatoes, cooked rice, cheese, salt, and pepper. Cover and simmer until cheese is melted.
