HAM & CHEESE PIE 
16 oz. Ricotta cheese
16 oz. cottage cheese
2/3 c. grated Parmesan cheese
2 c. diced ham, 3/4 lb.
2 tsp. Italian seasoning
Salt & pepper
Pie crust dough for 2 crust pie
1 egg yolk

Preheat oven to 375 degrees. Mix first 6 ingredients in bowl using 2/3 dough. Roll into 16 inch circle and place in 10 inch springform pan. Add mix. Fold crust over edge. Spread with egg yolk. Roll out remaining dough to form top and seal. Brush remaining egg yolk on top. Cut vents in top crust. Bake 60 minutes or until knife inserted comes out clean.
