HAM AND CHEESE PIE 
2 c. ham, chopped
2 med. tomatoes, chopped
1 tbsp. onion, minced
Sprinkle of oregano
Dash of pepper
8 slices American cheese (diced)
1/2 c. mayonnaise

PIE CRUST:

1 c. biscuit mix
3 tbsp. boiling water
1/2 stick butter

Crust: Mix all 3 ingredients in pie plate thoroughly until it ceases sticking. Pat down and form crust. Bake at 350 degrees for 15 minutes.

Filling: Place ham, tomatoes, onion, oregano and pepper in crust. Bake 20 minutes at 350 degrees.

Mix 8 slices American cheese (diced) with 1/2 cup mayonnaise. Spread over pie. Bake 10 to 15 minutes until cheese melts. To change flavors of pie, use Cheddar, Mozzarella or other cheese.
