EASY GARDEN VEGETABLE PIE 
2 c. chopped fresh broccoli or sliced fresh cauliflower
1/2 c. chopped onion
1/2 c. chopped green pepper
1 c. (4 oz.) shredded Cheddar cheese
1 1/2 c. milk
3/4 c. biscuit mix
3 eggs
1 tsp. salt
1/4 tsp. pepper

Cook broccoli in a saucepan with 1-inch boiling salted water for 5 minutes or until almost tender. Drain. Place broccoli, onion, green pepper, and cheese in the bottom of a 9-inch pie plate. Mix together remaining ingredients in a blender until smooth (about 15 minutes); pour into pie plate. Bake at 400 degrees for 35 to 40 minutes or until a knife inserted halfway between the center and edge comes out clean.

let stand 5 minutes before slicing. Garnish as desired. Store leftover pie in the refrigerator. Yield: 6 servings. NOTE: You may substitute 1 (10 ounce) package frozen chopped broccoli or cauliflower, thawed and drained for fresh, if desired.
