CALABACITAS 
3 to 4 zucchini or yellow squash, sliced
1 large onion, chopped
3 tbsp. oil
1/4 tsp. garlic powder
1 (4 oz.) can green chilies, chopped
1 can whole kernel corn
2 c. Cheddar cheese, grated

Sauté squash and onion in oil until just barely tender. Add garlic, chilies, corn and cheese. Mix well. Put in a 1-quart casserole baking dish.

Bake at 400°F for 20 minutes.
