HAWAIIAN CARROT BREAD 
2 c. flour
2 tsp. cinnamon
1 1/2 c. sugar
2 tsp. vanilla
1/2 c. coconut
1/2 c. raisins
2 tsp. baking soda
1 c. oil
3 eggs
1/4 c. nuts
2 c. grated carrots

Mix all ingredients well and let stand 20 minutes in two 8 1/2 x 4 1/2 inch greased and floured pans. Bake at 350 degrees for 50-55 minutes until toothpick inserted comes out clean. Note: Zucchini may be substituted for carrots.
