ZUCCHINI SAUSAGE PIE 
2 lb. zucchini chopped
1/2 lb. sausage
1/4 c. onion
1/2 c. cracker crumbs
3 eggs, beaten
1/8 tsp. garlic powder
1/8 tsp. parsley
1/8 tsp. oregano
1/2 c. Parmesan cheese

Cook zucchini in salted water and drain. Sauté sausage and drain. Combine zucchini and sausage with remaining ingredients except 2 tablespoons cheese. Pour into greased pan and sprinkle with 2 tablespoons cheese.

Bake at 350°F for 40 minutes.
