SAUSAGE ZUCCHINI BOATS 
4 med. zucchini (1 1/2 lbs.)
1/2 c. water
1/2 lb. bulk pork sausage
1/4 c. chopped onion
1 slightly beaten egg
1/2 c. finely crushed saltine crackers (about 14)
1/2 c. shredded Mozzarella cheese
1/2 c. grated Parmesan cheese
1/4 tsp. salt
1/4 tsp. dried thyme
1/8 tsp. garlic salt
Paprika
1/8 tsp. pepper

Halve zucchini lengthwise and scoop out pulp. Chop enough pulp to make 1 cup and set aside. Place zucchini shells, cut side down, in large skillet and add water. Cover and simmer until just tender (about 3 minutes) and drain. Remove from skillet and turn cut side up. Sprinkle with a little salt.

In skillet cook sausage and onion until meat is brown and onion is tender. Drain off fat. Stir in reserved zucchini pulp, egg, cracker crumbs, Mozzarella, Parmesan cheese, salt, thyme, garlic, salt and pepper. Mix well. Spoon mixture in zucchini shells. Place shells in a shallow baking dish and sprinkle with paprika.

Bake at 350°F about 25 minutes.
