POTATO, HAM AND CHEESE CHOWDER 
2 med. potatoes, peeled and cubed (2 c.)
1 c. chopped onion
3 tbsp. butter
1/2 c. water
3 c. milk
1/4 c. flour
Dash pepper
1 1/2 c. cubed, cooked ham
1 1/2 c. (8 oz.) cubed pasteurized process cheese (Velveeta)

Combine potatoes, onion, butter and water in 2 quart casserole or microwave batter bowl. Cover with plastic wrap. Microwave on High power 10 to 12 minutes, stirring once. Set aside.

Combine milk, flour and pepper in 2 quart casserole or batter bowl. Stir until smooth. Microwave on High power, uncovered, 8 to 10 minutes (or more) until mixture boils and thickens slightly; stirring 3 or 4 times. Stir into potatoes. Add ham and cheese.

Microwave on High power, uncovered, 2 to 2 1/2 minutes or until cheese is melted, stirring once.

Since microwave ovens vary in power, you may need to adjust your cooking time.
