SPINACH BALLS 
2 (10 oz.) pkgs. frozen, chopped spinach, cooked and drained
1 clove garlic, minced
1/2 tsp. black pepper
1 1/2 sticks butter, softened
2 c. herb seasoned poultry stuffing
2 medium onions, minced
5 lg. eggs, beaten
1/2 tsp. nutmeg (a must)
1/2 tsp. salt
1/2 c. Parmesan cheese, grated

In a mixing bowl, place spinach, poultry stuffing, and onions. Beat eggs and stir into spinach mixture. Add remaining ingredients and mix thoroughly. Chill until cold enough to shape into small balls. Place balls on baking sheet and bake at 350 degrees for 20 to 25 minutes or until edges begin to brown. Serve hot with appetizer picks. Leftovers can be warmed up and enjoyed another day.
