CORNISH HENS WITH RICE AND
SPINACH DRESSING
 
4 Cornish hens
1 box UNCLE BEN'S® long grain and wild rice
1 lb. fresh spinach

Clean hens for roasting. Prepare rice according to directions on box (I do not use instant rice). Stuff hens alternating fresh spinach leaves with rice mixture ending with spinach. Stuff tightly. Roast at 350 degrees for approximately 1 hour. Or place on rotisserie and cook over grill approximately 1 hour or until well browned. With gas grill put flame at medium. This recipe is also good with crab meat or mushrooms added to rice mixture for stuffing.
