FRENCH BREAD 
1 pkg. yeast
1 tbsp. sugar
1 1/2 tsp. salt
1 1/2 c. warm water
1 tbsp. melted shortening
4 c. flour

Dissolve yeast, sugar, salt in water. Add shortening and flour. Stir through mixture every 10 minutes, 5 times (total time - 25 minutes). Remove from pan onto floured board and divide into number of loaves. Makes 2 loaves. Cover with cloth and let set 10 minutes.

Grease cookie sheet or loaf pans lightly. Roll out each loaf into a thin sheet, then re-roll. Place on cookie sheets or in pans. Make several slits in the top of each loaf. Cover and let set another 1 1/2 hours. Bake at 375 degrees for 30 minutes.

After removing from the oven, wipe lightly with shortening or butter and place on wire racks to cool.
