MALTESE BAKED MACARONI 
1 lb. ziti pasta or any pipe style pasta
3-4 qts. homemade or jarred spaghetti sauce
Fresh grated Romano cheese
8 eggs, scrambled

Prepare homemade sauce or heat jarred sauce. Boil pasta. Start with sauce, then pasta, making layers with fresh grated Romano in between each layer in a deep casserole dish. Finish off with a layer of pasta with a thin layer of sauce and cheese. Scramble the eggs and evenly pour over layered pasta. Bake at 350 degrees for about 35 to 45 minutes or until top is crusty.

In Malta, we make Imqarrun Il-Forn or baked macaroni with a home made bognaise sauce. You may add peas, or diced marrows and carrots to it.
Mix it with the boiled pasta that is still left quite 'al dente', eggs and grated cheese.

This is a kid's favorite and very portable. It also keeps well in the freezer making it a great convenience food!!
