PEANUT BUTTER PIE 
1 1/4 cups sugar
2 cups crunchy peanut butter
2 (8 oz.) pkgs. low-fat cream cheese
2 tsps. vanilla
1 1/2 cups low-fat whipped topping
6 ozs. semi-sweet chocolate
7 Tbsps. hot coffee, brewed
2 chocolate graham pie crusts
This recipe makes 2 pies.

Cream peanut butter, sugar, cream cheese and vanilla in food processor. Add whipped topping, blend. Spoon onto crusts. Place in freezer uncovered until set, about 30-45 minutes. Melt chocolate with coffee in microwave. Spread on top of filling and place uncovered in freezer until set, about 15 minutes.

Since microwave ovens vary in power, you may need to adjust your cooking time.
