MEXICAN LASAGNA 
1 lb. ground beef
1 med. onion, chopped
1 can stewed tomatoes
1 (8 oz.) can tomato sauce
1 (4 oz.) can chopped green chilies
1 (4 oz.) can mushrooms
1/2 c. black olives, chopped
1 pkg. taco mix
12 flour tortillas
1 (8 oz.) pkg. cheddar cheese, grated

Brown beef and onion in skillet. Add next 6 ingredients and simmer for 10 to 15 minutes. Layer tortillas alternately with mixture. Top with grated cheese. Bake in 350 degree oven for 20 to 25 minutes.
