MEXICAN LASAGNA 
1 1/2 lb. beef
1 (16 oz.) can whole tomatoes
1 (8 oz.) tomato sauce
1 pkg. Ortega Hot and Spicy taco mix
12 flour or corn tortillas
1 (12 oz.) cottage cheese
2 c. shredded Velveeta Mexican hot or mild cheese
2 eggs

In a large skillet, brown beef, drain. Add canned tomatoes and taco seasoning and sauce. Simmer, uncovered 5 minutes.

In a bowl, combine cottage cheese, 1 cup shredded cheese and eggs. Place 2 tortillas on bottom of a greased 9x13 inch baking pan. Then overlap 6 tortillas around sides; spoon meat mixture evenly. Top with 2 tortillas, then spread cheese mixture.

Bake, covered, at 350 degrees for 45 minutes. Sprinkle with remaining cheese and garnish with lettuce, tomatoes and sour cream, if desired.
