MEXICAN LASAGNA (DIET) | |
1 lb. ground beef or turkey 1/2 c. chopped onion 1/2 c. chopped green pepper 2 c. canned, chopped tomatoes or tomato sauce 1 env. taco seasoning mix 6 oz. cheddar cheese (lite) 2 eggs, beaten 2 c. cottage cheese (lite) Flour tortillas Brown meat, onion and green pepper in skillet. Add tomatoes, taco seasoning mix and simmer for 5 minutes. Meanwhile, combine cheeses and eggs. Put 2 tortillas in bottom of 9"x13" pan. Add meat mixture. Put 2 flour tortillas on top of meat. Top with cheese mixture. Bake at 350 degrees for 40 minutes. Let set a few minutes. Garnish with lettuce and tomato. Makes 6 servings. 1 serving = 4 p, 1 br, 1 veg, 25 calories. |
