JUDY BRANDI'S FRIED POTATOES | |
1 lb. bacon 4-6 potatoes, cooked in skin, peeled and cubed 1-2 green peppers, sliced or chopped 1 onion, chopped Salt, pepper, garlic, sweet basil to taste 1 (12 oz.) pkg. fresh mushrooms 1/2 c. (or more) grated Parmesan cheese Cut bacon in 1 inch pieces and cook in large frying pan until cooked but not crisp. Add potatoes, onion, peppers and choice of spices. Stir to coat potatoes and cook until done - about 20 minutes. Add mushrooms, cover and cook about 5 minutes. Sprinkle with cheese. Cover and cook until cheese melts, about 2 minutes. Serves 4 to 6. |
